Putting those pumpkin guts to good use

During carving season, many people know to set aside their pumpkin seeds and roast them for a tasty treat. But what can you do with all those slimy guts left over? We featured a few ideas in our post about pumpkin-themed party ideas, but we know that not everyone is adventurous enough for a pumpkin slip-n-slide. Luckily, you can make some wonderfully delicious Pumpkin Gut Bread out of your carving leftovers!

Pumpkin Gut Bread Recipe


Step One
Preheat oven to 350 degrees.
Combine  3 1/2 cups of flour, 2 tsp. baking soda, 1 1/2 tsp salt, 2 tsp cinnamon, 2 tsp nutmeg and 3 cups of sugar in one bowl. Mix well.



Step Two
Using your fingers, separate 2 cups of fresh pumpkin guts from their seeds. Set aside. Beat four eggs in a bowl, separate from your dry ingredients.




Step Three
Dump your eggs, pumpkin guts, 1/2 cup of water and 1 cup vegetable oil into a blender and blend until your pumpkin guts are mixed well with the wet ingredients.





Step Four
Combine your wet ingredients with your dry ingredients and mix well.





Step Five
Pour your batter into a 9 inch bread pan and bake for one hour. Take out of pan and allow bread to cool on a rack.
